Clodagh McKenna’s one-pot prawn orzo

One-Pot Spicy Prawn Orzo

Serves 4

Ingredients

3 cloves garlic, crushed

4 tbsp olive oil

2 tsp dried oregano

1 tsp dried chilli flakes

450g prawns

240g orzo pasta

2 tins cherry tomatoes

2  tbsp fresh flat-leaf parsley, chopped

Sea salt & pepper


Method

1. Start by marinating the prawns. In a mixing bowl, stir together half the garlic with 2 tablespoons of the olive oil, 1 teaspoon dried oregano, ½ teaspoon chilli flakes and a pinch of sea salt. Add the prawns and coat well, cover and place in the fridge until you need them again.

2. Place a casserole dish or large saucepan over a medium heat and heat the remaining 2 tablespoons of oil. Add the tinned tomatoes, season with sea salt and freshly ground black pepper and cook, stirring occasionally, until they start to blister, 3 to 4 minutes. Add the remaining garlic, 1 teaspoon oregano and ½ teaspoon chilli flakes, and stir until fragrant - about 30 seconds.

3. Stir in 250ml of water, followed by the orzo. Bring to a boil, then reduce the heat to a simmer and cook for about 10 minutes, add more water if needed. Stir in the marinated prawns on top, cover and cook until they are cooked through and the orzo is also cooked, about 5 minutes more. Remove from the heat, divide among plates and finish with black pepper and chopped fresh flat leaf parsley.
