Last year 26-year-old heavy weight Christina Briggs from Wigan hit the headlines for claiming she felt tax payers should give her more benefits to eat healthily.
We sent our dietician Evelyn Toner to visit Christina, and set her a healthy eating plan. But three weeks on, will Evelyn's healthy eating tips have helped her to turn her life around?

Healthy sausage casserole
To serve a family of three twice for under £6
Ingredients
4 carrots peeled and roughly chopped into 1cm cubes, 4 celery sticks, roughly chopped into 1cm pieces1 onion diced2 tbsp dried mixed herbs300ml vegetable stockSalt and freshly ground black pepper12 Low Fat Pork Sausages350g Mushrooms2 x 400g cans chopped tomatoes800g baby new potatoes
Method
Sweat the onions off in a large pan for 3 minutes, add the carrots and celery and cook for a further 2 minutes. Add the vegetable stock and herbs, bring to the boil and simmer for 6 minutes on a medium heat.
On a non stick baking tray, prick the sausages and bake for 20 minutes at 180 degrees. Once cooked, remove them from the oven and cut into 4 pieces per sausage.
Quarter the mushrooms and add them to the vegetables along with the sausage and tinned tomatoes. Place in an ovenproof dish and bake for 20 minutes.
Place new potatoes into a pan, cover with water and bring to the boil. Simmer for 15 minutes or until soft.
Season to taste and serve
The remaining half of the casserole can be frozen and reheated in the oven when required
