Real Deal Chicken Burgers

Serves: 2
Ingredients
2 medium skinless chicken breast fillets (350g in total)1 large eggVegetable oil in a spray bottle, for greasing
For the spicy coating: 70g gluten-free plain flour1 tsp gluten-free baking powder ½ tsp celery salt½ tbsp smoked paprika ¼ tsp ground ginger ½ tsp cayenne pepper ½ tsp onion powder (optional)½ tsp garlic powder (optional)
To serve: 2 gluten-free burger buns, split2 tsp mayonnaise Small handful of shredded lettuce2 squares of processed cheese 2 tsp tomato ketchup
Method
1. To prepare the chicken breasts, butterfly them carefully using a large, sharp knife: lay them flat and slice horizontally so you can open each like a book, being careful not to cut all the way through.
Top tip: If you are unsure of the technique, place the chicken breasts between 2 sheets of cling film and bash until flat with a rolling pin or meat mallet - the goal is to make the chicken as flat as possible so it’ll get a super crispy coating and cook twice as fast, so either method is fine!
2. Add the ingredients for the spicy coating to a medium bowl and mix until well combined. Beat the egg in a small bowl with a fork.
3. Dredge the chicken in the spicy coating bowl until well coated. Next, dip into the beaten egg until coated once again. Finally roll the chicken around in the spice mix once more, until well covered with no eggy patches showing.
4. Heat or preheat the air fryer to 200C. Generously grease the base of the air fryer basket by spraying it with oil.
5. Place the prepared chicken in the air fryer basket and spray generously with oil until the floury patches disappear. Make sure the chicken fillets touch as little as possible (or air fry in separate air fryer drawers if space is lacking). Air fry for 8-10 minutes until the coating is crisp and golden, turning the fillets over halfway through and spraying lightly with oil once more.
6. Lightly toast the buns in the air fryer for 2-3 minutes until the bottoms and tops are a little crisp, but the bread inside still feels soft.
7. To construct, spread a thin layer of mayonnaise on the base of each bun, then top with shredded lettuce. Place a chicken fillet on next and top with a slice of processed cheese. Spread a thin layer of ketchup on the cut side of the top bun half, and place on top.
8. Serve with air fried fries or sweet potato fries.
Sweet Potato Fries
Serves: 2-3
Ingredients
2 medium-sized sweet potatoes (700g in total)3 tbsp vegetable or olive oil 1 tbsp smoked paprika1 tsp salt½ tsp ground black pepper 4 tbsp gluten-free plain flour or cornflour Vegetable oil in a spray bottle, for greasing
Method
1. Cut the sweet potatoes into strips 1cm (½ inch) wide and 5mm (¼ inch) thick.
2. Add the fries to a medium bowl, followed by the oil, smoked paprika, salt and pepper. Mix until well coated, then add the flour and mix once more.
3. Heat or preheat the air fryer to 200C. Generously grease the base of the air fryer basket by spraying it with oil.
4. Place the fries in the basket (making sure they are touching as little as possible) and spray again with oil. Air fry for 18-20 minutes until browned at the edges, turning over halfway through or shaking 3-4 times if particularly piled up.
