Bacon-wrapped chicken breast with lentils

It's day three of Feed Yourself Fabulous, when we look at how food can affect everyday health.

Dale Pinnock is back, and it's all about keeping your energy levels up throughout the day with a delicious chicken dish.

Bacon-wrapped chicken breast with lentils

Serves: 2

Ingredients

2 large chicken breasts4 rashers of smoked back bacon1 large red onion, finely choppedPinch sea salt400g of tinned green lentils (tinned, other lentils like puy lentils are fine too)3 handfuls of baby spinachLarge bunch of parsley, coarsely chopped

Method

  • Wrap each chicken breast securely with 2 rashers of bacon, place on a baking sheet, and bake at the top of an oven at 200c for around 25 minutes.

  • Saute the onion in a little olive oil with a pinch of sea salt, until softened

  • Add the lentils and continue to saute for 3-4 minutes

  • At the last minute, add the spinach and cook until it wilts. Add the chopped parsley and mix well.

To Serve: Place a serving of lentils in the middle of a plate, and top with the chicken breast.
