Phil Vickery's American cookies
Sesame Street are preparing to celebrate their 50th anniversary, and the Cookie Monster and Gonger are bringing the party to our kitchen!
As well as telling us all about the celebration and their new series ‘Cookie Monster’s Foodie Truck’, the muppet duo will be offering a helping hand to Phil Vickery who’s cooking them their favourite treat - American style choc chip cookies.
American cookies
Makes: Approx 10
Prep time: 10 minutes
Cook time: 10-12 minutes
Ingredients
125g soft light brown sugar
100g white sugar
150g soft unsalted butter
1 egg
1 egg yolk
2 tsp pure vanilla extract
300g all-purpose flour
½ tsp bicarbonate of soda
Up to 300g of chocolate chips or milk chocolate chunks, white chocolate chunks, raisins, Smarties
Method
Preheat your oven to 170°C/150°C Fan/325°F and line a baking tray with baking paper
To a bowl add the brown and white sugar and pour in the melted butter and beat together
Now beat in the eggs and vanilla until the mixture is light and creamy. Now add the flour and bicarbonate soda and mix together. Form into a large sausage shape, roll in cling film and chill well.
Remove the cling film and cut into 10 x ¾ cm slices and lay onto baking parchment
If you’re using chocolate, bash the chocolate into small chunks using a sealed bag and a rolling pin
Press in the top of the cookie your preferred choice of ingredients; chocolate, raisins or smarties or all three
Bake in the pre heated oven for 12 minutes until slightly risen and light brown, do not overcook
Remove from the oven and leave to cool before trying to remove from the parchment
