A taste of Clodagh's honeymoon
Clodagh’s back from her magical honeymoon in Ibiza to share a dish she’s been eating while soaking up the sun!Her spicy, saucy chorizo and tomato pasta is a one pot dish bursting with flavours and colourful fresh herbs - guaranteed to bring some joy to your dinner table to start your week!
One pot spicy Ibiza sausage pasta
Serves 6
Ingredients
Olive oil 400g fresh cooking chorizo sausage, sliced into 1-inch pieces 4 cloves of garlic, crushed1 large red chilli, thinly sliced 2 x 400g tinned plum tomatoes 100ml passata 1 tbsp fresh rosemary, finely chopped14 black olives, crushed, pits removed 2 bay leaves 500g Casarecce pasta (or you could use penne, fusilli or rigatoni)Sea salt and freshly ground black pepper
Method
1. Place a casserole dish or large saucepan over a medium heat and add 1 tbsp of olive oil. When the oil is hot, stir in the sliced fresh chorizo sausage and cook for 6-7 minutes, stirring every minute or so, until the sausage is browned.
2. Turn the heat down to low and stir in the crushed garlic and chilli, cook for a minute. Next add the plum tomatoes, passata, fresh rosemary, olives, bay leaves and season with sea salt and freshly ground black pepper. Stir and leave to cook for 15 minutes. 3. While the pasta sauce is cooking, cook the Casarecce pasta in a large saucepan of salted water for 10 minutes, or until cooked.
4. Drain the pasta and stir it into the spicy sausage pasta sauce, and mix really well so that all the pasta is completely coated.
5. Serve with gratings of fresh parmesan cheese and a big green salad.
