Quick carbonara with mushrooms

Sally Bee's quick mushroom carbonara recipe is a lovely, light yet creamy dish that's really filling and nutritious! It would make the perfect lunch on the Vow to Wow meal plan.

Ingredients

Serves 4

300g dried ribbon pasta 220g low fat crème fraîche 1tbsp olive oil 150g (5oz) chestnut mushrooms, sliced 240g spinach leaves 3 tbsp pine nuts, toastedGround black pepper

Method

  • Cook the pasta in a large pan of boiling water for 10-12 minutes or until al dente

  • While the pasta cooks, heat a non-stick frying pan, add the oil and mushrooms and sauté for 3-4 mins or until the mushrooms are golden

  • Stir in the spinach until the leaves are just wilted. Remove from the heat and season well with black pepper.

  • Drain the pasta in a colander, return to the pan, stir in the mushroom and spinach mixture, the pine nuts and the crème fraîche

  • Sprinkle with a few chopped herbs and some grated nutmeg if you have some

Serve straight away
