Nadia's lamb and apricot tagine

Nadia Sawalha is back with another super simple dish for the whole family! This time she's inviting us into her kitchen to demonstrate a homemade lamb tagine. Yum!

Serves 6Prep: 10 minutesCook: Approximately 2 hours 45 minutes

Ingredients:2 tbsp oil1 kg diced lamb shoulder2 tsp each of cinnamon, turmeric and cumin1 tbsp paprika2 onions, chopped3 cloves garlic, crushed2x400g canned chopped tomatoes750ml lamb stock2 tbsp clear honey350g dried apricots

To serve:

A large handful of coriander leaves, choppedA handful of almonds, fried in a little butterLemon wedgesCooked couscous mixed with fresh mint, coriander, olive oil and lemon juice or warmflat breads

Method:

  • Heat the oven to 160C/gas 3

  • Heat the oil in a large casserole dish. Toss the lamb in half the cinnamon, turmericcumin and paprika and fry in batches until browned.

  • Then add the onion and garlic and the remaining spices to the pan and cook over amedium heat until softened

  • Stir in the tomatoes, stock, honey and apricots along with the lamb to the pan. Cover and put in the oven for 2½ hours.

  • Remove from the oven and top with the coriander and nuts. Serve with the herbedcouscous or flat breads and lemon wedges.
