Turkey burgers with pea salsa
A quick, healthy alternative to a classic hamburger!
Serves 2
Ingredients
For the burgers200g Turkey mince2 tbsp red onion, very finely chopped2 tsp chipotle paste2 tbsp, coriander chopped2 slices Emmental cheese2 buns (gluten-free or nutty wholegrain)
*Salad to serve
For the pea salsa/guacamole
100g frozen peas, blanched1 tbsp onion, roughly chopped¼ red chilli , choppedSmall handful fresh mint¼ tsp ground cumin2 tbsp natural yoghurt 2Juice of one lime
Method
To make the burgers, put the turkey mince, red onion, chipotle paste and coriander in a bowl. Season, mix well and form into two patties.
To make the guacamole, put the blanched frozen peas, onion, red chilli, coriander, ground cumin, natural yoghurt and a squeeze of lime in a small food processor and whizz until blended
Cook the burgers in a non-stick pan for 3-4 minutes on each side until golden. Add a slice of emmental cheese, and heat until melted. Serve in buns ( whole grain or gluten-free) with the guacamole and salad.
