Spinach and apple soup

This soup is surprisingly hearty and refreshing. It's also rich in iron from the spinach, and is packed with Vitamin C from the fruit.

Ingredients

1 onion, peeled and diced2 celery sticks, washed and diced1 tbsp ground cumin3 apples, peeled, cored and chopped200g bag spinach750 ml gluten-free vegetable stock1 lemon1 tbsp olive oilFreshly ground pepper

Method

  • Set a pan over a high heat. Add the oil, the diced onion and celery, plus the cumin. Lower the heat and pour in 750ml hot gluten-free vegetable stock. Simmer for 5 min.

  • Take the pan off the heat and set aside to steep and cool for 10 minutes

  • Meanwhile, add the chopped apples to a blender or food processor along with the spinach

  • Start blending, whilst slowly pouring in the slightly cooled vegetable mix until it’s the consistency you want

  • Finish with a little lemon zest and juice for extra zing
