Sally's red onion salsa and spicy salmon
This spicy fish supper is a breeze to put together for family or friends. It's tasty and quick, making the perfect midweek meal.
Serves 4
Ingredients
2 tsp ground cumin2 tsp ground coriander1 tsp smoked paprika1 tsp turmeric4 salmon fillets (about 200g each)2 tbsp extra virgin olive oil200g low-fat natural yogurtHandful watercress to serve
For the red onion salsa
200g plum tomatoes, finely chopped1 red onion, finely chopped1 red pepper, grilled until the skin blackens, then peeled, seeded and chopped (or 1 ready prepared from a jar)Handful fresh basil, choppedHandful fresh mint, chopped1 tbsp red wine vinegar1 tsp runny honey
Method
To make the red onion salsa
Pop all the ingredients together in a bowl and mix well to combine
Cover and stand at room temperature for 30 minutes to let flavours infuse
To make the salmon
Put all the spices together in a medium bowl and mix well. Add the salmon fillets in to the spice mix and coat well.
Next heat the olive oil in a large non-stick frying pan over a medium heat. Cook the salmon fillets, skin side down first for 3 minutes or until the skin goes crispy.
Now gently turn over and cook the other side fora further 3 minutes
Place the salmon onto a plate, and top with the onion salsa, a dollop of the yogurt and a bunch of watercress on the very top
