Sally Bee's baked sausages and balsamic tomatoes

I cannot guarantee the sausages you buy will be gluten-free, unless you can confirm that with your butcher. Always ask for ‘sin-free’ sausages, these are low in fat, additives and salt.

Ingredients

8 sin-free sausages6 garlic cloves, sliced2 red onions, cut into wedges1 tbsp olive oil600g cherry tomatoes, halved3 tbsp balsamic vinegarHandful of fresh basil leaves, torn, to serve

Method

  • Preheat the oven to 180ºC/fan 160ºC/gas 4. Put the sausages, garlic and red onions in a large roasting tin, then drizzle over the olive oil and toss to coat. Bake for 25 min or until golden brown.

  • Remove the roasting tin from the oven, then add the cherry tomatoes and drizzle over the balsamic vinegar. Season with ground black pepper, then gently toss everything together to combine. Return the tin to the oven for a further 15 min or until the sausages are cooked through, then stir through the basil and serve.
