Greek chickpea salad

Serves 4

Ingredients

1 can chickpeas, drained 1 Romaine lettuce, chopped3oz Feta cheese crumbled½ cucumber, chopped1 red pepper, chopped1 green pepper, chopped1 yellow pepper, chopped½ red onion, chopped1 handful chopped fresh parsley

For the dressing:

Juice from 1 lemon juice 1 tbsp extra virgin olive oil1 tsp dried oreganoPinch Maldon Sea SaltFreshly ground black pepper

Method

  • Combine all the salad ingredients in a large bowl and gently toss with your hands to combine

  • In a small bowl, combine the dressing ingredients and whisk together

  • Pour the dressing over the top of the mixed salad and toss again to combine
