Fill-me-up vegetable casserole

This dish will not only fill you and satisfy the hunger pangs, it will also give you a vegetable and nutrient filled boost to support Living to the Max!
Ingredients
1 tbsp extra virgin olive oil1 onion, finely chopped3 garlic cloves, sliced1 tsp smoked paprika½ tsp cumin1 tbsp dried thyme3 medium carrots, sliced2 medium sticks celery, finely sliced1 red pepper, chopped1 yellow pepper, chopped2 x 400g tins chopped tomatoes250ml vegetable stock (I use Knorr as these are gluten-free)2 courgettes, sliced thickly2 sprigs fresh thyme250g cooked lentils (or you can pre-cook red lentils to the packet instructions)
Method
Heat the oil in a large, heavy-based pan. Add the onions and cook gently for 5 - 10 minutes until softened.
Add the garlic, spices, dried thyme, carrots, celery and peppers and cook for 5 minutes
Add the tomatoes, stock, courgettes and fresh thyme and cook for 20 - 25 minutes
Take out the thyme sprigs. Stir in the lentils and bring back to a simmer. Serve with rice, mash or quinoa.
