Strawberry dessert two ways
As Wimbledon gets underway next week, today we're celebrating strawberries. While the All England Tennis Club charges 25p per strawberry, you can get a punnet from your local shop for a lot less than that!
John has a sinless and a slightly more sinful way to enjoy them. Take your pick... depending on whether you're being naughty or not.
Mini strawberry Eaton mess trifles
Makes: 4
Ingredients
For the Sponge Layer
200g Madeira cake30ml champagne (though cava or prosecco would be as good)30ml elderflower cordial
For the Fruit layer
50g seedless strawberry jam30ml champagne175g strawberries

100ml double cream200ml full fat Greek yoghurt3 shop bought meringue nestsSmall scattering of flaked almonds, to serve

4 x martini glory glasses
Method
Divide the Madeira cake between the four glasses, then mix together the champagne and cordial, and drizzle over the cake, pressing the cake down into the bottom of the glass with a spoon
For the fruit layer, mix together the jam and champagne, then chop the strawberries finely and stir into the mixture. Divide this between the glasses, pouring it on top of the cake.
For the topping, whip the cream to soft floppy peaks then whisk in the yoghurt. Crumble in the meringues and fold in. Dollop this on top of the other layers, and then finish with a scattering of the flaked almonds.
Strawberry ceviche salad
Ingredients
250g watermelon150g hulled strawberries¼ cucumberJuice from ½ limeSmall pinch salt75g feta cheeseSmall handful fresh mint
Method
Slice the watermelon into very thin triangles, then slice the cucumber and strawberries very thinly too. Place into a large bowl and add the juice and salt and toss together until everything is coated in the sharp juices – though try not to break any of the slices apart.
Tip the salad out onto a large platter, then cut the feta into small cubes and scatter them over the salad. Finish with a few mint leaves.
