Shelina's prawn and noodle salad
Shelina Permaloo joins us once more from Mauritius to show us another recipe from her native land, this time in the form of this fresh and fragrant prawn noodle dish.
(Serves 6)
Ingredients:
350g egg noodles3 tbsp sweet Thai chilli sauce1 tbsp light soy sauceJuice of 1 lime (ready squeezed bottles available in supermarkets)Handful of coriander250g cooked prawns slit lengthways100g green beans50g toasted cashew nuts1 medium red onion thinly sliced into half moon shapePinch white pepper10 X fresh red chilli (for granish)
Method:
In a pan of boiling hot salted water add the green beans and the egg noodles and cook for 3-4 minutes until the noodles and beans have softened. Remove from heat, drain and keep to one side.
In a small pan, add the cashew nuts and allow to toast for a minute – being careful to keep an eye on them the whole time, as you don’t want them to catch and burn
In a small mixing bowl, add the soy, fish sauce, lime juice and sweet chilli dressing and mix together – have a taste and adjust accordingly
In a large mixing bowl add all the ingredients in the bowl and then generously pour over the dressing, mix it all together with your hands and serve warm or cold
