Pineapple and Cashew Curry
Former Masterchef winner Shelina Permaloo brings us as Taste of Mauritius, guaranteed to banish the winter blues.
She's cooking a delicious Pineapple and Cashew Curry, with the help of her mum.
Serves 4
THIS IS A ONE POT WONDER!!!
Ingredients:
1 medium pineapple cut into 2.5cm cube (1 tin 297 pineapple chunks drained)140g green bean trimmed80g cashew nuts2tbsp madras curry powder600ml vegetable stock1tsp mustard seeds2 cinnamon stick snapped into twoSalt according to taste2tbsp freshly chopped coriander to stir in right at the endCorianderNaan bread/flat bread/roti
Method:
In a small pan toast the curry powder and mustard seeds for 30seconds
Add all the ingredients (except the coriander and green beans) to a medium size saucepan and cook over a medium flame for 20minutes. Add the green beans and cook for another 10minutes. Remove from heat, stir in the coriander and serve with fresh naan bread or plain brown rice.
