Pancetta and chestnut stuffing
Stuffing is a must in every Christmas Day spread!

Ingredients:2 banana shallots, diced1 leek, finely diced15 thin slices of pancetta5 chopped slices of pancetta2 cloves minced garlic400g Cumberland sausage, skins removed100g cooked chestnuts, roughly chopped150 g fresh breadcrumbs1 large egg, beatenKnob of butter2 tbsp chopped parsley
Method:
Preheat the oven to 180C/gas 4
Melt butter in a frying pan and add shallot, leek, garlic and chopped pancetta. Cook for 5 minutes without colouring, then put in a bowl and cool. Add sausage meat, chestnuts, parsley, breadcrumbs and egg and mix well, season and shape into around 15 small balls, wrap each ball with a slice of pancetta and bake in the oven for 25 minutes.
