Nisha Katona's quick pork and cashew biryani
Nisha Katona is in the kitchen making one of her favourite dishes - pork and cashew biryani!

Ingredients:4 tbsp vegetable oil2 medium onions, sliced6 spring onions, sliced1 ½ inches of ginger, minced3 cloves garlic, minced2 finely diced pork, loin chops2 ½ tbsp garam masala1 tsp turmeric¼ tsp chilli powder1 cup white basmati rice2 cups water85g salted cashew nuts50g (three rings) pineapple from a can, chopped (optional)Salt to taste
Method:
Heat the oil, and fry the onions, 4 of the spring onions, (reserving 2 onions - mostly green tops for garnish) ginger and garlic. Add the pork and fry for about 5 minutes until the pork has some colour.
Stir in the garam masala, turmeric and chilli powder. Add a splash of water and simmer with a lid on until the pork is just tender. Make sure it does not dry out.
Once the pork is just tender, pour in the cup of rice and the water
Simmer with the lid off until it is nearly dry. Stir in the cashew nuts and the pineapple (if using).
Cover with a lid and switch off the heat. Leave for 10 minutes and the biryani is ready to serve. Season with salt if needed.
Serve with a spoon and garnish with the remaining spring onion greens
