Mozzarella meatballs
Alex Hollywood's sinless Southern baked chicken was a hit on Monday's show (and hubby Paul Hollywood even dropped by to support her!) and today she's back to show us how to make another Hollywood family favourite - mozzarella meatballs!
Ingredients
2-3 tbsp olive oil300g pork mince300g beef mince75g breadcrumbs20g Parmesan1 egg100g cubed mozzarella1/4 glass red wine1tsp oregano 1tsp thymeSalt and pepperHandful chopped parsleyFlour to dust
For the sauce
1 large carton passata1/2 glass red wine2 bay leavesA pinch or two of sugarSalt and pepper6 chopped capers
Method
Soak the crumbs in the wine then combine the mince , herbs, crumbs, eggs and salt and pepper.
Make a pattie in your hand with some of the mix. Pop a mozzarella cube in, shape into a ball and roll in flour. Make up the rest of the mix.
For an easy tomato sauce, pour a carton of passata with 6 chopped capers, a bay leaf, salt and pepper, 1/2 tsp sugar and half a glass of red wine into a casserole dish over the meatballs.
Pop the whole thing in the oven for 20-30 minutes and serve with spinach tagliatelle and crusty garlic bread .
