Sugar-free granola
James Tanner is back with his absolutely delicious sugar-free granola, helping us kick off the morning healthy and guilt-free!
Yields 15 x 50g servingsPrep: 10 minutesCook: 25 minutes
Ingredients:3 tbsp maple syrup or raw runny honey1 ½ tsp vanilla extract3 tbsp almond butter, softened3 egg whites400g rolled oats80g oat bran1 ½ tsp ground cinnamon½ tsp ground ginger1 pinch of sea salt50g dried apricots, chopped50g sultanas140g toasted whole almonds40g sunflower seeds or pumpkin seeds
Method:
Preheat the oven to 180C/ gas 4
Line a baking sheet with greaseproof parchment
Gently warm the maple syrup or honey, vanilla extract and almond butter in a small pan over a low heat. Whisk the egg whites to soft peaks.
In a large bowl add the oats, bran, cinnamon, ginger, salt, apricots, sultanas, almonds and sunflower seed. Mix in the melted maple/honey butter until well combined then fold in the whisked egg whites until all the dry ingredients are coated.
Spoon the mixture onto the baking sheet so you have a thin layer. Bake for 25 minutes, or until golden, stirring every 10 minutes during cooking.
Leave to cool completely and store in an airtight container
TIPS: For best results this mixture should keep for 3-4 days stored in an airtight containerAdd any of your favourite dried fruits, nuts or seedsTo serve, top with milk or sprinkle over natural yogurt
