Festive pork quesadillas
Add a touch of Christmas to your Mexican feast with Dean's festive quesadilla - complete with brie and cranberry sauce!

Ingredients:8 flour tortillas4 tbsp cranberry sauce250g leftover shredded belly pork200g Brie, sliced thinly as you can
Method:
Spread four of the tortillas with a spoonful of the cranberry sauce then top with the shredded or finely chopped pork belly and brie. Place a second tortilla on top making 4 sandwiches in total.
Toast each quesadilla in a dry non-stick pan over a medium heat for around 2-3 minutes each side. Cut each one into four then serve with salad if liked.
