Nadia's fancy finger food

Watching the Oscars has put us in the mood for being fancy, and what's fancier than some tasty finger food to keep you going through the night? Nadia brings us her chicken wings, blue cheese dip, guacamole and homemade tortilla chips.

(All recipes serve 4)

Chicken wings

Ingredients:

3 garlic cloves, crushed1 tbsp olive oil1 tbsp Worcestershire sauce4 tbsp hot pepper sauce 3 tbsp honey1½ kg chicken wings, halved at the jointSalt and pepper

Method:

  • In a large bowl, mix together the garlic, oil, Worcestershire sauce, pepper sauce, honey and salt and pepper

  • Add the chicken wings and toss around to make sure they're fully covered in the marinade. Leave to marinate for a few minutes or even better, overnight.

  • When ready to cook, heat oven to 180C/160C fan/gas 4. Drain and then spread the wings out on a very large baking tray. Bake for 30 mins then increase oven to 200C/180C fan/ gas 6.

  • Remove from the oven and toss in all the reserved marinade then return for a further 20 minutes, tossing a few times as they cook. They should be sticky with most of the marinade evaporated.

  • Serve with blue cheese dip and tortilla chips (recipes below)

Blue Cheese Dip

Ingredients:

150ml buttermilk150ml soured cream85g blue cheese, crumbledPinch of salt

Method:

Simply mix the buttermilk, soured cream and blue cheese together with a pinch of salt

Guacamole

Ingredients:

3 ripe avocados1 tomato, choppedJuice 1 large limeHandful coriander, leaves and stalks chopped, plus a few leaves, roughly chopped, to serve1 small red onion, very finely chopped1 chilli, red or green, deseeded and finely choppedSalt and pepper

Method:

  • Halve and stone the avocados and use a spoon to scoop out the flesh into a bowl with the tomato

  • Add the lime juice, chopped coriander, onion and chilli, then season with salt and pepper. Roughly mash everything together. Scatter with the coriander leaves.

Homemade tortilla chips

Ingredients:

12 corn or flour tortillas (round)2 tbsp of of oil (or spray oil)

Method:

  • Heat oven to 200C/180C fan/gas 6. Brush both sides of the tortillas with the oil, then cut into triangles with scissors.

  • Arrange in a single layer on 1 or 2 baking sheets and bake for 7-8 mins - make sure they are not touching as they will not crisp!
