Bonfire Night cupcakes
Warm up by the bonfire with these flaming tasty cupcakes!
Makes 12Prep: 10 minutesCook: 12-15 minutes if making homemade cupcakes
Ingredients:12 homemade or shop bought cupcakes (chocolate looks good)
For homemade cakes:
Vanilla cupcakes:125g unsalted butter, softened125g caster sugar125g self raising flour2 eggs, beaten1-2 tbsp milk½ tsp vanilla extract
Cream cheese frosting:100g unsalted butter, softened250g cream cheese, room temperature40g icing sugar2-3 drops red food colouring2-3 drops orange food colouring1 small box chocolate sticks or flaked chocolate carefully sliced, or a combination of both
Method:
For the cakes if making:
Preheat the oven to 180C / gas 4.
Beat the butter until softened then beat in the sugar until light and fluffy, sift in the flour then fold through. Add the eggs, milk and extract then whisk together until fully combined. Divide the mixture between 12 cupcake cases then bake for 12-15 minutes. Leave to cool on a wire rack.
For the cream cheese frosting:
In a large bowl or mixer beat the softened butter and cream cheese until smooth then stir in the icing sugar
Split the mixture into two separate bowls then add a couple of drops of the colouring into each, stir well.
Fit a large piping bag with a large star nozzle. Place the two colours into a piping bag; keeping them separate vertically, then pipe onto the top of the cupcakes. Stack on the chocolate sticks and flaked chocolate (if using) to resemble a bonfire.
