Banana butterscotch pudding
Treat yourself to Bill Granger's sweet and sticky treat - perfect to eat snuggled up after dinner on a cold February night.
(Serves 4)
Ingredients:
125g plain flourPinch of salt115g caster sugar3 tsp baking powder1 banana, mashed250ml milk85g unsalted butter, melted1 egg, lightly beaten1 tsp natural vanilla extract
Topping:
140g soft brown sugar3 tbsp golden syrup
To serve:
Vanilla ice cream or thick (double/heavy) cream
Method:
Preheat the oven to 180C. Sift the flour, salt, sugar and baking powder into a bowl. Add the banana, milk, butter, egg and vanilla and whisk together well. Pour into a greased 2 litre baking dish and put the dish on a baking tray.
To make the topping, put the brown sugar, golden syrup and 250ml of boiling water in a small saucepan and bring to the boil. Pour carefully over the pudding, then bake for 30-40 minutes or until cooked through when tested with a skewer. Serve with vanilla ice cream or cream.
