Tiger prawn and watermelon salad
Remember that you don’t absorb the cholesterol from prawns into your blood stream.
I find watermelon addictive in the summer months and I also find it perfect for weight loss, especially when served with the prawns. No need for more carbohydrate with this dish.
Serves 4-6
Ingredients
350g cooked tiger prawns1 medium sized watermelon, cut in half with all the flesh scooped out.50g sunflower seeds50g pine nutsHandful fresh basil, leaves pickedHandful fresh mint, leaves picked
For the dressing
1 tbsp low salt soy sauce1 tbsp lime juice1 tbsp light olive oil1 tbsp rice vinegar1 tbsp runny honey1 chilli, finely sliced3 spring onions, finely sliced
Method
Start by making the dressing. Mix all the dressing ingredients together in a bowl and mix together well.
Now pile the prawns and watermelon on to your serving dish, sprinkle over the sunflower seeds and pine nuts and just before serving, pour over the dressing
This dish is best eaten on the day it is made before the watermelon loses all of its juice.
