The juicy, healthy cherry burger

I cook these burgers in my fat reducing grill machine, which is perfect because any residual fat from the meat, drains away from the burgers. If you dry-fry them in a frying pan, make sure you drain off any fat and the same if you grill them.

Mixing dried cherries into lean minced beef reduces fat and increases antioxidants. What a winner! Always buy good quality minced beef steak – preferably from a butcher who can trace its original source.

Serves: 4

Ingredients

1 small sweet red onion, 12 oz lean minced beef steak100g dried cherries,finely chopped100g whole-wheat breadcrumbs1 clove garlic, peeled and crushed1 tbsp balsamic vinegar2 tsp Dijon mustard1 tsp Worcestershire sauceFreshly ground pepper4 whole-wheat English muffins, split8 lettuce leaves2 large beef tomatoes

Method

  • Place the lean minced beef in a large bowl and gently mix in the dried cherries, breadcrumbs, garlic, vinegar, mustard, Worcestershire sauce and black pepper until combined

  • Divide this mixture into 4 equal portions and form your burgers. Use damp hands to form the burger shape as this will stop them sticking to your fingers.

  • Now cook either on your fat reducing grill, under the grill of by dry-frying (this means using a non-stick pan and not adding any extra fat). The heat needs to be high and you cook the burgers quickly so that they are still moist in the middle but charred on the outside

  • Meanwhile, toast your whole-wheat English muffins and slice up the beef tomatoes

  • Serve as an open burger with the meat on one side and the lettuce, tomatoes and onion on the other
