Super quickety chicken chasseur

I love these throw it all together dishes. And this is special because it is so quick to make. 30 minutes from start to finish!

Traditionally this is made with wine called Chasseur but actually it works brilliantly with any white wine or even rose! We often have this for a tea time meal, midweek – super quick and super healthy.

(Serves 4)

Ingredients

1 tbsp extra virgin olive oil 4 chicken thigh fillets, skin removed and sliced 2 cloves garlic, crushed 1 medium red onion, chopped 150g button mushrooms, sliced 2 sticks celery, sliced 1 medium red pepper, de-seeded and diced 1 tbsp plain flour 250ml white or rose wine 2 tbsp tomato puree 6 spring onions, chopped1 tbsp dried Italian herbsFreshly ground black pepper

Method

  • Using a large non-stick frying pan over a high heat sauté the chicken for 5–6 minutes

  • Next, add the garlic and onion and cook for 3-4 minutes until the onion is softened

  • Now add the mushrooms, celery and red pepper. Stir well.

  • In a small bowl combine the flour, dried herbs and wine. Mix in the tomato puree and stir until smooth.

  • Pour this mixture onto the chicken and stir well until the mixture bubbles and thickens

  • Cover and cook for 7–10 minutes until the pepper and celery are tender

  • Add some freshly ground black pepper and the chopped spring onions, stir through and serve.

  • Serve with small portion of brown rice and green salad
