Simply marinated tuna
This is a simple dish both in method and flavour. If you are happy with a little spice leave the chilli in – if you prefer a calmer dish, leave it out – no problem!
(Serves 4)
Ingredients
4 x 125g tuna fillets, thinly sliced4 shallots, finely slicedZest and juice of 4 lemons4 capers in brine, rinsed and drained3 tbsp olive oil1 chilli, red or green, halved and deseeded and dicedFreshly ground black pepperServe with a big green salad or veggies
Method
In a large bowl, mix together the shallots, lemon juice and zest, capers, olive oil and black pepper
Add the tuna fillets and leave to marinate in the fridge for 12 hours, turning occasionally
When ready to cook, heat a grill or barbecue to hot and take the tuna from the marinade. Cook the fish for 1-2 minutes on each side for rare, 4 minutes for well done and serve at once drizzled with the remaining marinade with salad or veggies.
