Simply marinated tuna

This is a simple dish both in method and flavour. If you are happy with a little spice leave the chilli in – if you prefer a calmer dish, leave it out – no problem!

(Serves 4)

Ingredients

4 x 125g tuna fillets, thinly sliced4 shallots, finely slicedZest and juice of 4 lemons4 capers in brine, rinsed and drained3 tbsp olive oil1 chilli, red or green, halved and deseeded and dicedFreshly ground black pepperServe with a big green salad or veggies

Method

  • In a large bowl, mix together the shallots, lemon juice and zest, capers, olive oil and black pepper

  • Add the tuna fillets and leave to marinate in the fridge for 12 hours, turning occasionally

  • When ready to cook, heat a grill or barbecue to hot and take the tuna from the marinade. Cook the fish for 1-2 minutes on each side for rare, 4 minutes for well done and serve at once drizzled with the remaining marinade with salad or veggies.
