Chicken fajitas - Bikini Promise

Chicken fajitas are a great way to bring the family together for a quick and easy dinner - perfect for summer evenings.

Serves 2

Ingredients: 2 chicken breasts, finely sliced1 red onion, finely sliced1 red pepper, sliced1 red chilli, finely sliced

For the marinade:1 heaped tbsp smoked paprika1 tbsp ground corianderA pinch of cuminFreshly ground black pepper2 medium garlic cloves, crushed1 tbsp olive oilJuice of 1 lime4-5 drops of Tabasco sauce

Accompaniments:One pack wholemeal tortillasBag of mixed salad

Method:

  • Preheat the oven to 200 ̊ C. Mix all the marinade ingredients in a large bowl and add the sliced chicken and vegetables leave to stand for 30 minutes.

  • Wrap the tortillas in foil, then heat a frying pan or wok until smoking hot. Pop the tortillas in the oven to warm through.

  • Drizzle a teaspoon of vegetable oil onto the hot pan and add the chicken mix. Move around continuously until the chicken is charred on the outside and cooked through completely - this shouldn’t take more than 5 minutes if you’ve cut the chicken into fine slices.

  • Once cooked, tip the pan contents into a large bowl and serve with the heated tortillas (they should have been in the oven around 8 mins), and a big delicious salad
