Sweet and sour pineapple chicken
Sally Bee's super fast, super healthy, super delicious pineapple chicken dish for the Vow to Wow plan will brighten up the darkest of winter evenings!
Ingredients
200g Basmati rice1 tsp olive oil300g skinless chicken breast fillets, cut into strips1 tbs tomato paste1 tbs white wine vinegar4 spring onions chopped1 tbs honey1 red pepper, cut into strips125g fresh pineapple cut into chunks2 tsp grated fresh ginger½ tsp Chinese 5 spice powder2 tbs light soy sauce6 cherry tomatoes
Method
Start the rice cooking according to the instructions on the pack (generally 10-12 minutes). When cooked set aside.
Heat a large frying pan with the oil and when hot enough for heat haze to form, add the chicken strips and stir fry for 5 minutes. Remove from pan and set aside.
Add the spring onion, the red pepper, pineapple and cherry tomatoes to the pan and fry for 2-3 minutes
Reduce the heat, add the ginger, the soy sauce, the tomato paste, 5 spice powder and white wine vinegar and honey to the pan and simmer for 2-3 minutes
Return the chicken to the pan and heat through until thoroughly hot. Drain the rice and serve in two bowls with the chicken on top.
