Sun-soaked Mediterranean salad
After a long and sunny weekend, Alex Hollywood gets us in the mood for summer, with her fresh and tasty sun-soaked Mediterranean salad.
Ingredients
1 large clove fresh garlic1 slightly stale ciabatta, sliced lengthwaysLeftover chicken stripsCooked green beansHandful black olives and green olivesFresh basil leavesAny leftover salad leavesx2-4 tomatoes - chopped into quartersParmesan shavings
For the dressing
2 tbsp good balsamic4 tbsp olive oilSalt/pepper
Method
Cut the garlic clove in half and rub all over the stale ciabatta, then chop the bread into cubes
Put on an oiled tray, toss and bake in a hot oven for 8 mins till nicely toasted
Throw the rest of the ingredients into a bowl and mix well
Add the bread
For the dressing, combine all ingredients in a jar, shake well and pour over the salad
Mix once more, cover with Parmesan shavings and season to taste
