Summer berry filo tart
You don't have to go without treats on the Bikini Promise. This is a great one to make with the kids too.
Ingredients:
3 tbsp light olive oil150g fresh strawberries, hulled and halved200g fresh mixed summer fruit (such as raspberries and blueberries)2 tbsp runny honey2 tbsp sunflower seeds8 sheets filo pastryIcing sugar, for dustingLow-fat crème fraîche and fresh mint leaves to serve
Method:
Preheat the oven to 180C/gas mark 4. Grease eight holes of a 12-hole muffin tray with a little light olive oil, using a piece of kitchen paper.
In a large bowl, mix together the berries, honey and sunflower seeds. Set aside.
Lay the filo sheets on top of each other and cut the stack into eight squares. Take one of the eight stacks and brush each square of filo with olive oil. Layer the squares at different angles in one of the greased holes of the muffin tin, pushing the filo down into the hole, then continue with the remaining stacks, layering them into the remaining holes, until you have used all the stacks.
Divide the berry mixture between the filo cases and bake for 15 minutes, or until golden brown.
Dust each tart with a little icing sugar and serve with a dollop of low-fat crème fraîche and some fresh mint leaves.
