Snappy tuna melt
Try my healthier version of a traditional tuna melt, for a filling, and tasty lunchtime treat!
Serves 4
Ingredients
Nutty Wholemeal Chunky Bread1 tbsp olive oil1 clove garlic, crushed1 red pepper deseeded and finely diced2 spring onions, thinly sliced2 tomatoes, very finely chopped300g can tuna in spring water, drainedBlack pepper
To Serve:
Watercress or mixed salad leavesSliced avocado½ cucumber, diced
Method
Toast the chunky wholemeal bread on both sides – put to one side.
Heat the olive oil in a pan, and over a moderate heat sauté the garlic, spring onions, and pepper. Cook for 5-6 minutes until soft.
Add the chopped tomatoes, tuna and black pepper, cook for another 3-4 minutes until heated through.
Pile tuna mixture onto pre-prepared toast. Pop under a hot grill for just a couple of minutes to melt together.
