Simple summery pasta salad

Alex Hollywood shows us how to make a quick and easy summer salad with feta, pasta and toasted pine nuts.

Ingredients

Left over pasta1 packet feta (200g)50g baby tomatoes red/yellow, halved1 small red onion, sliced1/2 cucumber, quartered and sliced1/2 tsp oreganoRocket leavesSmall handful of toasted pine nuts

For the dressing

1 lemon1 tbsp oilSalt and pepper

Method

  • In a bowl, combine the pasta, onions, tomatoes, cucumber, oregano and rocket leaves.

  • Cube the feta and mix in.

  • Roll the lemon to soften then halve and squeeze onto the salad

  • Add the dressing and toasted pine nuts, toss and season to taste.
