Shelley brings us a taste of Canada
Lorraine's Taste Off is giving one lucky viewer the chance to have their homemade dessert on the patisserie counter in Waitrose stores across Britain. We had hundreds of entries and today we meet the last of our three finalists, Shelley Shapir.
Her recipe is for Nanaimo bars, which have a coconut biscuit base, custard middle and a dark chocolate topping.
Shelley is a part time teaching assistant at her local primary school. She is married with two children: Nathaniel aged nine and Ruby aged seven.
She says: “Nanaimo is a town in British Columbia, Canada. I am from British Columbia. This is a traditional sweet recipe to Vancouver Island. When I moved abroad, I couldn’t get it here. My Dad was a home baker and loved tray bakes - he made this when I was young and I always helped out.
"I have been interested in baking from a very young age, and don’t remember a time when there was no baking in the house. I grew up on a farm so there was always fresh produce such as home grown eggs. Now, I always bake my own bread and pizza dough at home but am nervous of pastry.
"I enjoy cooking with own kids and think it is very important to pass this onto the children.
