Sally Bee's sliced aromatic chicken
Sally Bee brings us a nutritious gluten-free recipe in the shape of her aromatic chicken. This is an all-in-one dish that will become a firm favourite on the Living to the Max plan!
Serves 4
Ingredients
4 chicken breast portions, cut into thin slices2 tbsp coriander seeds2 tsp cumin seeds6 cloves½ tsp ground nutmeg½ tsp ground turmeric1 tbsp olive oil1 onion, finely sliced½ green pepper, sliced½ red pepper, sliced2 cloves garlic, peeled and grated1 tbsp cornflour1 inch fresh root ginger, peeled and grated300ml/ ½ pint/ 1 ¼ cups hot gluten-free chicken stockFreshly ground black pepper
Method:
Grind all the spices together in a pestle and mortar, then dry fry themfor a couple of minutes in a large non-stick frying pan until they give off a good aroma
Now add the olive oil to the pan and the sliced onion, peppers and garlic. Gently sauté and soften for about 5 minutes.
Next add the sliced chicken pieces, cornflour and the grated ginger. Stir well and allow the chicken to brown a little before adding the chicken stock.
Cook for 20 mins over a medium heat with the lid on
Serve with rice or a baked rooster potato
