Sally's sweet chilli pork wraps
Sally Bee is live in the studio to kickstart our week on a healthy note with her sweet chilli pork wraps.
Makes 8 wraps
Ingredients:100g green beans, chopped1 tbsp olive oil500g lean pork mince1½ tsp harissa paste2 tbsp sweet chilli sauce1 tbsp reduced salt soy sauce2 red peppers, cut into strips8 flour tortillas1 iceberg lettuce, shredded
Method:
Blanch the green beans for 1 minute in a saucepan of boiling water, then refresh in a bowl of cold water. Drain and reserve.
Put a large non-stick frying pan over a medium heat and add olive oil. Add the pork and cook for a few minutes until browned, then stir through the harissa paste, sweet chilli sauce and soy sauce. Add the reserved beans and peppers and cook for 5 minutes or until the pork is cooked through.
Warm the tortillas according to the pack instructions. Put an eighth of the pork mixture and some shredded lettuce on each, and roll up to serve.
Note: Serve with a small portion of cooked brown rice and salad for a more substantial meal.
