Quick spicy chicken and lime salad

This is a fantastically quick and easy meal. Although you need around 30 minutes to cook it, and 30 minutes marinating time, the prep can be done in less than 10 minutes, so you can get your nails painted while it’s doing its thing!

(Serves 4)

Ingredients:

1 standard bag of mixed salad leaves1 large carrot, grated1 ripe avocado, halved, pitted, peeled and slicedA handful of cherry tomatoes4 spring onions, finely choppedJuice of 2 limes, to serve

For the spice mix:

1/2 tsp cayenne pepper1/2 tsp mild chilli powder1 tsp garlic granules (or 2 large cloves of garlic, crushed)1 tsp dried basil2 tsp brown sugarZest of 1 lime1 tbsp extra virgin olive oil

Method:

  • Preheat the oven to 180C/gas mark 4 and line a baking tray with foil

  • Mix all the spice mix ingredients together, along with the lime zest and olive oil, and spread on both sides of the chicken breasts. Lay the breasts on the prepared baking tray, then leave to marinate for 30 minutes in the fridge.

  • Remove from the fridge and cook in the oven for about 25 minutes, then turn and cook for a further 5–10 minutes, depending on the size of the breasts, until cooked through

  • Serve the cooked chicken on a bed of salad leaves with the grated carrot, avocado, tomatoes and spring onions, then drizzle the lime juice over the chicken and salad before serving
