Quick carbonara with mushrooms
Sally Bee's quick mushroom carbonara recipe is a lovely, light yet creamy dish that's really filling and nutritious! It would make the perfect lunch on the Vow to Wow meal plan.
Ingredients
Serves 4
300g dried ribbon pasta 220g low fat crème fraîche 1tbsp olive oil 150g (5oz) chestnut mushrooms, sliced 240g spinach leaves 3 tbsp pine nuts, toastedGround black pepper
Method
Cook the pasta in a large pan of boiling water for 10-12 minutes or until al dente
While the pasta cooks, heat a non-stick frying pan, add the oil and mushrooms and sauté for 3-4 mins or until the mushrooms are golden
Stir in the spinach until the leaves are just wilted. Remove from the heat and season well with black pepper.
Drain the pasta in a colander, return to the pan, stir in the mushroom and spinach mixture, the pine nuts and the crème fraîche
Sprinkle with a few chopped herbs and some grated nutmeg if you have some
Serve straight away
