Prawn skewers with garlic and parsley
Bill Granger fires up his barbie once again, and this week he's throwing on one of his favourite prawn recipes from back home.
Makes: 20
Ingredients
4 tbsp olive oil5 garlic cloves, crushed2 small red chillies, seeded and finely chopped2 tsp grated lemon zest2 tbsp chopped fresh flat-leaf (Italian) parsley20 large raw prawns, peeled and deveined, tails left intact
Method
If you are using wooden skewers, soak them in water for a while beforehand so they don’t scorch. Mix the olive oil, garlic, chilli, lemon zest and parsley in a large non-metallic bowl. Add the prawns and stir to coat them well, then cover the bowl and refrigerate for 30 minutes.
Preheat a char grill pan or barbecue to high heat. Thread each prawn onto a skewer and cook for 2 minutes on each side, or until they are lightly charred and just cooked through.
