Pesto tomatoes on toast

This must be one of the most nutritious breakfasts on record. The recipe serves two people, but you can just as easily make it for less or more.

(Serves 2)

Ingredients:2 slices of whole-nutty breadsmall amount of butter4 large ‘on the vine’ tomatoes, sliced2 teaspoons red pestoolive oil (for drizzling)freshly ground black pepper, to taste

Method:1. Preheat the grill to high.

  • Grill the bread lightly on both sides and butter.

  • Place the tomato slices on the toasted bread.

  • Drop a little dollop of red pesto on top of each tomato and drizzle a tiny bit of olive oil on top. Sprinkle with freshly ground black pepper.

  • Grill for 3–4 minutes, or until the tomatoes and pesto are warmed through and bubbling a bit.
