Peas with pancetta and spring onions
Put a twist on your peas with pancetta and spring onions!

Ingredients:2 tbsp olive oil50g pancetta cubes1 large clove garlic, crushed3 tbsp chopped spring onion500g frozen peas, thawed75ml hot chicken stockSalt and black pepper
Method:
Heat the olive oil in a large frying pan over medium heat. Stir in the pancetta, garlic and spring onions and cook until translucent.
Stir in the peas, and add hot chicken stock, salt and black pepper to taste. Bring to the boil, then reduce heat and simmer until the peas are tender and the liquid is slightly reduced. Serve with the orange and pomegranate glazed spiced gammon.
