Sweet 'n' smoky pumpkin curry ?

Nisha Katona is back in the kitchen and celebrating Halloween with her sweet 'n' smoky pumpkin curry!

IngredientsEquivalent of half a butternut squash/pumpkin, peeled and cut into 1 inch cubes1 tsp cumin seed1/2 tsp turmericPinch chilli powderSalt to taste1/2 tsp brown sugar1 medium onion finely slicedJuice 1/2 lemon3 tbsp vegetable oilWater to loosen1/2 cup salted roasted cashews (like the bags you buy in the garage!)Pomegranate seeds to garnish1 cup basmati white rice2 cups water1 cup spinach puree or even shredded spinach leaf we can throw in towards end of boil

Method:

  • In a wok style pan add the oil and heat it- when hot add cumin seeds and fry until black/brown-this is critical.

  • Now throw in the onion and fry to soft and golden. Add the pumpkin in and all the other ingredients except the nuts. Simmer with the lid partially on until the pumpkin is soft. Stir in the roasted cashews and garnish with pomegranate seeds

For the rice

Add the rice and water to a pan and boil until nearly dry. Stir in the spinach and put the lid on and remove from heat. Leave for 10 min
