Money Mum's Creamy Veggie Pasta

To use Money Mum's own words this meal is "cheap, quick, easy and delicious" and at 88p per portion she's not wrong!

Serves 4

Ingredients:

400g dried spaghetti  (or any pasta you have)

Oil for frying

1 onion, finely diced

2 peppers, finely diced

1 tub own brand soft cream cheese 

250g frozen spinach, defrosted

1 vegetable stock cube

1 tsp garlic powder 

Method:

  • Cook the spaghetti according to packet instructions.

  • Heat the oil in a frying pan, add the onion, peppers and cook until soft. 

  • Add the cream cheese, spinach (including defrosting liquid), stock cube and garlic powder and season with salt and pepper. Add extra water if needed.

  • Cook for a few minutes before adding the pasta and tossing with the creamy sauce.
