Money Mum's Creamy Veggie Pasta
To use Money Mum's own words this meal is "cheap, quick, easy and delicious" and at 88p per portion she's not wrong!
Serves 4
Ingredients:
400g dried spaghetti (or any pasta you have)
Oil for frying
1 onion, finely diced
2 peppers, finely diced
1 tub own brand soft cream cheese
250g frozen spinach, defrosted
1 vegetable stock cube
1 tsp garlic powder
Method:
Cook the spaghetti according to packet instructions.
Heat the oil in a frying pan, add the onion, peppers and cook until soft.
Add the cream cheese, spinach (including defrosting liquid), stock cube and garlic powder and season with salt and pepper. Add extra water if needed.
Cook for a few minutes before adding the pasta and tossing with the creamy sauce.
