Dean's minty lamb burgers
In need of some inspiration for dinner this weekend? Then why not try Dean Edwards' delicious Minty Lamb Burgers?
Ingredients:
Oil for frying½ onion, diced2 cloves garlic, crushed500g lamb mince1 tbsp fresh mint, finely chopped1 tsp dried oregano80g feta cheese, crumbledZest ½ lemon
Tzatziki:150g Greek yogurt½ cucumber peeled, deseeded and diced2 tbsp fresh mint, chopped½ clove garlic, crushedSmall pinch sugar
To serve:
1 beef tomato, sliced4 burger buns toasted (use brioche if liked)½ red onion, sliced
Method:
Fry the onion and garlic in a little oil for 4-5 minutes over a medium heat, do not colour. Leave to cool before mixing with the mince, mint, oregano, feta and lemon zest, season with salt and pepper. Shape into 4 patties then chill in the fridge for 30 minutes.
While the burgers are chilling make the tzatziki, combine the yogurt, cucumber, mint, garlic and sugar in a bowl, mix and leave to stand for 10 minutes before seasoning with salt and pepper.
Pre heat an ovenproof frying pan over a medium heat then add a little oil. Add the burgers then seal until golden, this will take around 5 minutes. Put the burgers into a pre heated oven set at 190C /gas 5 for 10-12 minutes.
Meanwhile place a slice of tomato onto the base of the toasted buns which have been toasted on a griddle pan then transfer the burgers on top along with some red onions and a spoonful of tzatziki. Skewer the burger then serve with French fries if liked.
