Mexican spicy beef with corn fritters
These corn fritters make a tasty alternative to rice or noodles - and they go perfectly with this colourful, spicy beef.
Serves 4
Ingredients:225g frozen sweetcorn, thawed2 tbsp plain flour2 spring onions, thinly sliced1 egg, plus 1 egg white1 tbsp extra virgin olive oil450g beef minute steaks, thinly sliced1 tbsp cajun or Mexican spice mix1 large onion, sliced2 red peppers, thinly sliced1 small avocado, slicedLemon wedges and fresh coriander or parsley, to serve
Method:
Combine the sweetcorn, flour, spring onions, egg and egg white in a mixing bowl, then season with black pepper
Add the ½ tablespoon olive oil to a large frying pan and set over a medium heat. Add 4 dollops (about 2 tbsp each) of the corn mixture to the pan and cook for 2–3 minutes on each side until browned, carefully flipping them once.
Transfer the fritters to a plate and cover to keep warm. Repeat with the remaining mixture to make 8 fritters in total.
Meanwhile, combine the beef, spice mix, onions and peppers in a mixing bowl
Drizzle a the remaining ½ tablespoon of olive oil to the frying pan and set over a high heat, then cook the beef mixture, in batches, for 1–2 minutes, or until browned
Serve with the avocado and lemon wedges, garnished with coriander or parsley
