Marvellous meatloaf muffins with mash frosting
For half term, Nadia Sawalha's making one of her family's favourites - meatloaf muffins with easy tomato sauce.
Makes 12
Ingredients
600g ground beef, chicken, lamb or pork60g fresh breadcrumbs1 large carrot, grated1 tomato, finely chopped3 tbsp grated Parmesan cheeseSmall bunch of parsley, finely chopped1 onion, finely chopped1 clove garlic, minced
Method
Place your chosen ground meat in a bowl and mix with the breadcrumbs, carrot, tomato, Parmesan, parsley, onion and garlic. Season well and divide between a 12 hole muffin tin.
Bake in the oven at 190c/gas 5 for 20 minutes
Remove from the oven and pipe the mashed potato (see below) on top. Serve with a ‘sea’ of peas or baked beans.
For the mash
Ingredients
6 large pots, peeled and cubedTbsp butter or olive oilSalt and pepper
Method
Boiled the pots in salted water until tender . Then drain really well (if liked return to the heat for 30 secs to make sure they are really dry). Then mash (or use a ricer) with the butter or oil and seasoning. Use to pipe onto of the meatloaf muffins.
Allow to cool down a little and spoon into a piping bag, fitted with a star nozzle if liked. Pipe decoratively on top of the muffins.
If desired, spray with a little oil and grill until golden
