Lisa's cookie dough pots

There's nothing more satisfying than a homemade treat, so Lisa Faulkner shows us how we can make the perfect pud this weekend - cookie dough pots! Delicious and family-friendly, these pots take just 20 minutes from start to finish.

Cookie dough pots

Makes: 4

Prep: 5 minutes

Cook: 12-15 minutes

Ingredients

100g soft brown sugar 

100g butter, melted

1 egg, beaten 

100g plain flour

1 tsp baking powder

1 tsp vanilla extract 

50g chocolate chips 

Pinch of salt

Ice cream to serve (optional)

Method

1. Preheat the oven to 180C/gas 4

2. Mix together the sugar, butter, egg, flour, baking powder, and vanilla extract and finally add the chocolate chips and salt at the end

3. Spoon into little ramekins or oven proof dishes

4. Bake for 12-15 minutes until golden and cooked through. Top with a scoop of ice cream.

TIPS

  • By adding about 50g extra flour to the dough you can turn the cake mixture into cookie dough. Shape into a log, wrap and chill in the fridge before slicing and baking for about 10 minutes.

  • Swap chocolate chips for sweet treats of your choice, eg white chocolate chips, chocolate buttons etc, or add a combination of sweets for a fun alternative
