Lisa Faulkner's apple and blackberry dessert
Lisa's showing us how to make the perfect apple and blackberry dessert for the whole family!
Evie's pudding
Serves 4
Ingredients
4-5 granny smith apples
2 tbsp soft brown sugar
2 tsp vanilla extract
100g unsalted butter
100g caster sugar
2 eggs
100g SR flour
170g blackberries or frozen forest fruit
Method
1. Preheat the oven to 180c.
2. Core , peel and chop the apples, place in a pan with 1 tsp vanilla and brown sugar and cook over a low heat for a few minutes until slightly softened.
3. Cream the butter and caster sugar together then beat in the eggs and 1 tsp vanilla extract.
4. Place the stewed apples in a shallow pie dish, mix through the blackberries then spoon over the cake mixture.
5. Bake for 25-30 minutes and serve with custard.
